Women's Retreat Recipes

Here are the recipes so many of you ladies have been requesting. Enjoy



Mexican Rice

1 cup rice

2 cups water

1 (14oz) diced tomatoes

1/2 to 1 cup corn

1/4 cup green peppers

1 tsp chili powder

2 tsp salt

2 tbsp oil



Mexican Lasagna

3 cups diced chicken

2 cups tomato sauce

2 tbsp chili powder

1/2 cup diced onion

1/2 cup diced green pepper

1 can (approx 350g) diced tomatoes

1 cup salsa

1 can tomato soup (284 g)

approx 2 cups mozzarella and 4 cups cheddar mixed together

10-12 inch soft flour tortillas (or corn)



In a 9 x 13 inch pan do 2 layers of each as you would layer a lasagna

Top with cheese mix, thinly sliced tomatoes or olives if so desired
